It seems that there is a holiday for just about every food out there. Some are a bit odd, however other holidays give us a great excuse to splurge on delicious treats. December 4 has been dedicated National Cookie Day! By whom you ask? I really don’t know, but that shouldn’t stop us from enjoying our favorite cookies today.
For all of you history buffs out there, here’s a very brief history of the cookie:
“The English word ‘cookie’ is derived from the Dutch word “koekje,” which means little cake. Bakers used to place a small amount of cake batter in the oven to test the temperature. They soon discovered that these little bits of cooked batter were quite tasty on their own, and the cookie was born!” (National Cookie Day- A Time to Celebrate by William Smith)
Can’t decide which cookie you like the best? Here’s a recipe for Oatmeal Raisin Chocolate Chip Cookies that are to die for!
Lina’s Chocolate Chip Oatmeal Raisin Cookies

1 1/4 c all purpose flour
2/3 c super fine sugar
1 c rolled oats
1 c shredded dried coconut
1/2 c raisins
1/2 c chocolate chips
1 egg, beaten
1/2 c unsalted butter
2 T Corn Syrup, Light Molasses OR Golden Syrup (I suggest corn syrup)
1T Boiling Water
1 t Baking Soda
1- Preheat oven to 325 degrees and place parchment paper on a cookie sheet.
2- Mix flour and sugar in a large bowl. Add chocolate chips, oats, coconuts, and raisins. Make a well in the center. Add beaten egg, but don’t mix yet.
3- In a small saucepan, melt butter and syrup on low heat.
4- In a small bowl mix boiling water with baking soda. Add to the butter and stir immediately
4- Pour butter mixture into flour bowl and mix with a spoon or fork thoroughly.
5- Drop by the tablespoon onto cookie sheet for 15-20 minutes until brown. Cool 2-3 minutes on sheet and then transfer to a wire rack to cool completely.
Now, pour yourself a tall glass of milk, and enjoy!
